Banana Cake


Actually yesterday mama and my hubby celebrates our 21st anniversary... We actually plan to go out and catch movie... Tapi oleh sebab kedua2 nye tak sihat... batal kan saja niat tu dulu. Tunggu bila both of us dah sembuh.

Actually bila mama imbas kembali 21 tahun yg lepas.... We get to know each other very fast... get engaged on 30 Jan 1988... married on 17 Nov 1988. A year later my first child was born 18 Nov 1989. So setiap kali mama & hubby celebrates anniversary we will remember her bday.

So yesterday mama saja2 bake Banana Cake for everybody at home. Got these recipe from Periplus Mini Cookbooks "Malaysian Cakes & Desserts" To my judgement- to sweet but moist banana cake. Recipe to share with everybody. Several adjusment have been made.

Ingredients:
150g very ripe bananas (mama used pisang emas)
2 teaspoon lime juice
150g butter
150g sugar (mama used 100g castor sugar 50g brown sugar)
3 medium eggs, beaten
150g self raising flour
pinch of bicarbonate of soda
Banana essen ( not in recipe - 1 teaspoon)

Method:
Line the base of an 18cm round or square cake tin with greaseproof paper and brush the sides lightly with softened butter. Preheat oven to 170c (240F).

In a small bowl, mash the banana with a fork and stir in the lime juice. Set a side.

Cream the butter and sugar together until light and fluffy(beating with an electric mixer, or by hand with a wooden spoon). Pour the eggs in a little at a time, beating well in between additions.

Using a large metal spoon, fold in half the flour and bicarbonate of soda without over-stirring or beating the mixture which would otherwise toughen the cake) Fold in the mashed bananas until well incorporated and then finally, the rest of the flour.

Turn the mixture out into the prepared tin, hollowing out the middle slightly to prevent it rising to a dome in the middle. Bake in the preheated oven for about 40 minutes or until cake is well risen and golden brown.

Allow cake to cool on the tin for 10minutes before running a knife around the edges and turning it out to cool on a wire tray.
